Blueberry Buckle

Ingredients:

  • cup white sugar
  • cup butter softened
  • 1 egg
  • 2 teaspoons lemon zest
  • 1 cups all-purpose flour
  • 2 teaspoons baking powder
  • teaspoon salt
  • cup milk
  • 1 tablespoon all-purpose flour
  • 1 cups fresh blueberries
  • cup cold butter 1 tablespoon
  • cup brown sugar
  • cup white sugar
  • cup all-purpose flour
  • teaspoon ground cinnamon

Directions:

  1. Preheat oven to 350F. Grease an 8×8 pan.
  2. In a large bowl, cream together the white sugar, softened butter, egg, and lemon zest until fluffy.
  3. In a separate bowl, combine 1 cups flour, baking powder, and salt. Add to the sugar mixture, alternating with milk, mixing just until combined.
  4. Toss the blueberries with 1 tablespoon of flour. Fold into the batter and spread in the prepared pan.
  5. Combine all topping ingredients in a small bowl until crumbly. Sprinkle over the batter.
  6. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
