Ingredients:
– 4 boneless, skinless chicken breasts
– Salt and pepper to taste
– 2 tablespoons olive oil
– 2 cups cherry tomatoes, diced
– 2 cloves garlic, minced
– 1/4 cup fresh basil leaves, thinly sliced
– 1 tablespoon balsamic vinegar
– 1 tablespoon extra virgin olive oil
– 1/4 teaspoon red pepper flakes (optional)
– 1/2 cup shredded mozzarella cheese
– Balsamic glaze, for drizzling (optional)
– Fresh basil leaves, for garnish
Directions:
1. Season the chicken breasts with salt and pepper on both sides.
2. In a large skillet, heat the olive oil over medium-high heat.
3. Add the seasoned chicken breasts to the skillet and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
4. In the same skillet, add the diced cherry tomatoes and minced garlic. Cook for 3-4 minutes, or until the tomatoes start to soften and release their juices.
5. Stir in the sliced basil, balsamic vinegar, extra virgin olive oil, and red pepper flakes (if using). Cook for an additional 1-2 minutes.
6. Return the cooked chicken breasts to the skillet, spooning the tomato mixture over the top of each chicken breast.
7. Sprinkle shredded mozzarella cheese over the tomato mixture.
8. Cover the skillet and cook for 2-3 minutes, or until the cheese is melted and bubbly.
9. Remove the skillet from heat and let it rest for a few minutes.
10. Drizzle with balsamic glaze (if using) and garnish with fresh basil leaves before serving.
