Crispy Zucchini Recipe

Ingredients:

  • 2 zucchini
  • Salt to taste
  • Black pepper to taste
  • 100 grams of Parmesan cheese, grated
  • 1 teaspoon marjoram
  • 1 teaspoon paprika
  • 3 eggs, beaten
  • 100 grams of breadcrumbs
  • 50 grams of flour
  • Olive oil for frying

Directions:

Prepare the Zucchini:

  1. Slice the zucchini and place it in a bowl.
  2. Sprinkle with salt and let it sit for a few minutes to release excess moisture.
  3. Squeeze the liquid from the grated zucchini using a clean kitchen towel or cheesecloth.

Prepare the Coating:

  1. In one bowl, mix together the breadcrumbs and flour.
  2. In another bowl, beat the eggs and mix in the grated Parmesan cheese, marjoram, and paprika.

Coat the Zucchini:

  1. Roll the grated zucchini in the flour and breadcrumb mixture.
  2. Then dip the zucchini into the egg mixture with cheese, ensuring they are well-coated.

Fry the Zucchini:

  1. Heat olive oil in a frying pan over medium heat.
  2. Fry the coated zucchini for 4-5 minutes on one side until golden brown.
  3. Turn the zucchini over and cook on low heat for another 5 minutes until fully cooked and crispy.

Serve:

  1. Remove the zucchini from the pan and place them on paper towels to drain any excess oil.
  2. Serve hot and enjoy!
