Crock Pot Bourbon Chicken

Crock Pot Bourbon Chicken is a flavorful and tender dish thats perfect for a hearty meal. Made with juicy boneless chicken thighs cooked in a savory bourbon sauce, this slow-cooked recipe is sure to please.

Ingredients:

  • 3 lbs boneless skinless chicken thighs
  • 3 tablespoons cornstarch
  • 1/4 cup sliced green onions or more to taste
  • 1/2 teaspoon fresh grated ginger
  • 4 cloves garlic, minced
  • 1/2 teaspoon crushed red chili flakes
  • 1/3 cup apple juice
  • 1 1/2 tablespoons honey
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 3 tablespoons cider vinegar
  • 1/4 cup water
  • 1/4 cup Bourbon
  • 1/4 cup soy sauce
  • Salt and pepper to taste

Directions:

  1. In a small bowl, mix all sauce ingredients together.
  2. Place chicken in the slow cooker and pour the sauce over top. Cover and cook on low for 6-7 hours or on high for 3 hours.
  3. Remove chicken from the slow cooker and chop into bite-sized pieces. Cover to keep warm.
  4. In a separate bowl, combine 3 tablespoons of water with cornstarch to make a slurry. Turn the slow cooker up to high and whisk the cornstarch slurry into the sauce. Cover and allow to thicken, stirring occasionally, for about 10 minutes.
  5. Stir the chopped chicken back into the thickened sauce in the slow cooker. Add sliced green onions.
  6. Serve the Crock Pot Bourbon Chicken over rice.
