Crock Pot Bourbon Chicken is a flavorful and tender dish thats perfect for a hearty meal. Made with juicy boneless chicken thighs cooked in a savory bourbon sauce, this slow-cooked recipe is sure to please.
Ingredients:
- 3 lbs boneless skinless chicken thighs
- 3 tablespoons cornstarch
- 1/4 cup sliced green onions or more to taste
- 1/2 teaspoon fresh grated ginger
- 4 cloves garlic, minced
- 1/2 teaspoon crushed red chili flakes
- 1/3 cup apple juice
- 1 1/2 tablespoons honey
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 3 tablespoons cider vinegar
- 1/4 cup water
- 1/4 cup Bourbon
- 1/4 cup soy sauce
- Salt and pepper to taste
Directions:
- In a small bowl, mix all sauce ingredients together.
- Place chicken in the slow cooker and pour the sauce over top. Cover and cook on low for 6-7 hours or on high for 3 hours.
- Remove chicken from the slow cooker and chop into bite-sized pieces. Cover to keep warm.
- In a separate bowl, combine 3 tablespoons of water with cornstarch to make a slurry. Turn the slow cooker up to high and whisk the cornstarch slurry into the sauce. Cover and allow to thicken, stirring occasionally, for about 10 minutes.
- Stir the chopped chicken back into the thickened sauce in the slow cooker. Add sliced green onions.
- Serve the Crock Pot Bourbon Chicken over rice.
