Dill Pickle Pasta Salad 

This Dill Pickle Pasta Salad is a tangy and creamy delight, perfect for picnics, barbecues, or a refreshing side dish. The combination of crunchy pickles, sharp cheddar cheese, and a creamy dressing makes this salad a crowd-pleaser.

Ingredients:

  • pound dry shell pasta about 3 cups
  • cup pickles sliced
  • cup cheddar cheese diced
  • 3 tablespoons white onion finely diced
  • 2 tablespoons fresh dill
  • cup pickle juice
  • cup mayonnaise
  • cup sour cream
  • teaspoon cayenne pepper
  • 4 tablespoons pickle juice
  • salt & pepper to taste

Directions:

  1. Boil pasta al dente according to package directions. Run under cold water to stop cooking.
  2. Toss cold pasta with about cup of pickle juice and set aside for about 5 minutes. Drain and discard pickle juice.
  3. Combine mayonnaise, sour cream, cayenne pepper, 4 tablespoons of pickle juice, salt, and pepper in a small bowl and mix well.
  4. In a large bowl, toss pasta, pickles, cheddar cheese, white onion, and fresh dill with the dressing. Refrigerate for at least 1 hour before serving.
