Ingredients:
- cup butter, softened to room temperature
- cup powdered sugar, sifted
- 1 egg yolk, at room temperature
- teaspoon vanilla extract
- 1 cups all-purpose or cake flour
- cup granulated sugar, for coating
Directions:
- Make the dough: In a mixing bowl, cream together butter and powdered sugar until pale and fluffy. Mix in the egg yolk and vanilla extract until well combined. Gently sift in the flour, and fold to form a soft dough.
- Refrigerate the dough: Wrap the dough in plastic wrap and refrigerate for 20 minutes to firm up.
- Divide and roll: After chilling, divide the dough in half. Roll each half into a log approximately 4 inches long and 1 inch in diameter.
- Freeze: Wrap each log in plastic wrap and freeze for 45 minutes.
- Prep for baking: Preheat oven to 356F 180C. Line a baking sheet with parchment. Unwrap dough logs and roll in granulated sugar to coat evenly. Slice each log into -inch thick rounds and place on prepared sheet.
- Bake: For 15-18 minutes until golden. Allow to cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
