Ingredients:
- 1 1/2 cups (300g) long-grain white rice
- 1 can (10.5 ounces or 298g) condensed cream of chicken soup
- 1 can (10.5 ounces or 298g) condensed cream of mushroom soup
- 1 cup (240ml) chicken broth
- 1/2 cup (120ml) milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- Salt and pepper to taste
- 2 cups (about 10 ounces or 280g) cooked chicken, shredded or diced
- 1 cup (about 4 ounces or 110g) frozen mixed vegetables (peas, carrots, corn, etc.)
- 1 cup (about 4 ounces or 110g) shredded cheddar cheese
Optional topping:
- 1 cup (about 60g) crushed butter crackers or breadcrumbs mixed with melted butter
Instructions:
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray or butter.
- In a large mixing bowl, combine the condensed cream of chicken soup, condensed cream of mushroom soup, chicken broth, milk, garlic powder, onion powder, dried thyme, dried oregano, dried parsley, salt, and pepper. Stir until well combined.
- Add the cooked rice, cooked chicken, and frozen mixed vegetables to the soup mixture, and stir until evenly coated.
- Pour the mixture into the prepared baking dish and spread it out evenly with a spatula.
- Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
- If desired, sprinkle the crushed butter crackers or breadcrumbs mixed with melted butter evenly over the cheese layer.
- Cover the baking dish with aluminum foil and bake the casserole in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the casserole is bubbly and the cheese is melted and golden brown on top.
- Remove the casserole from the oven and let it cool for a few minutes before serving.
