A crispy, Southern-inspired snack or side dish thats perfect for any meal.
Ingredients:
- 1 pound okra, chopped
- 1/2 cup onion, chopped
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
- 1 egg, beaten
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup cornmeal
- Vegetable oil for frying
Directions:
1 Combine Wet Ingredients: In a large bowl, mix the chopped okra, onion, salt, pepper, water, and beaten egg until well combined.
2 Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and cornmeal.
3 Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
4 Heat Oil: In a large skillet, heat the vegetable oil over medium heat.
5 Fry Patties: Drop spoonfuls of the batter into the hot oil and fry for 2-3 minutes on each side, or until golden brown.
6 Drain and Serve: Remove the okra patties from the oil and drain on paper towels. Serve hot.
