Roasted Summer Squash

Roasted Summer Squash is a simple yet delicious side dish thats perfect for showcasing the fresh flavors of the season. Tossed with olive oil and a blend of parmesan, panko, and spices, these tender squash slices are roasted to perfection with a golden, crispy finish.

Ingredients:

  • 1 pound summer squash about 2 medium
  • 1 tablespoon olive oil
  • 2 tablespoons parmesan cheese grated
  • 1 tablespoon panko bread crumbs
  • 1 teaspoon lemon pepper seasoning
  • teaspoon paprika
  • teaspoon kosher salt or to taste

Directions:

  1. Preheat the oven to 400F.
  2. Cut the squash into ” slices. Toss with olive oil.
  3. Combine the remaining ingredients in a small bowl and toss with the squash.
  4. Place the squash on a baking pan and roast for 12-14 minutes or until tender. Broil for 1-2 minutes until the crumbs are lightly browned.
